Winter
The sounds of birds slowly decline as the cold gets stronger, little stirs outside and yet people gather, to talk, to take quick, cold walks, to exchange gifts and be warmed by firelight.
Our new truffles need light for growth and so trimming the oaks becomes imperative before the truffle spores wake from their icy slumber.
WORKSHOPS: Truffles & Venison
We forage for truffles, learn how to cook with them.
We explore the world of venison butchering, making sausages, using as much of the animal as possible and practicing cooking with this sustainable and highly nutritious natural product.
December - February
We host 3 workshops in this time, 6-8 participants

Slowly the light of day returns and to-do lists look more motivating. Everything indoors looks shabby and everything outdoors looks inviting. The garden starts requiring love and slowly the truffle spores sink into the wet earth to soak up the spring rains. Another harvest invisibly begins.
Dry walls need stacking, young plants need tending and pools need deep cleaning.
WORKSHOPS: Exploring the Quercy
We bake sourdough, we learn how to repair dry stone walling, we clear forests, pick herbs, plant vegetables.
There is an opportunity to have individual day trips to the the Pech Merle cave paintings, explore Rocamadour, visit the producers of all things regional around us.
March - May
We host 3 workshops in this time, 6-8 participants

The great afternoon languidness descends on the land and creatures move only in shady patches. Mornings are bright and busy but the louder the cicadas get, the quieter the rest of the world gets. Until, finally, with the setting sun, life starts stirring again and the clink of ice welcomes us to the cool of evening.

Hunting and gathering begins in earnest and shortening days are filled with preserving, foraging, discussing treasures found and tasting new inspirations.
WORKSHOPS: Foraging
We forage - mushrooms, herbs, berries. Then we explore how to work with these products in the kitchen. We may have the first of the venison on the table, we learn to cook with this natural resource.

A guest area with shared kitchen, bathroom and area for eating and relaxing.
The kitchen is stocked with all the basics for breakfast like coffee, tea, milk, bread, butter, cheese, yoghurt, jam, eggs and muesli. Plant-based options are available too. Everything is organic.

3-5 October - Community work, join hundreds of locals for a day of dry stone wall repair along the GR65 (Chemin de Compostella)
